Montes Food Reviews and Recepies

The Evil Jungle Princess is one of my favorite recipes which I often find myself eating for several days in a row.  This is a personal adaptation from Graham Kerr’s Evil Jungle Princess.  It is great served by itself or over rice.  
Evil Jungle Princess
Serves 2
Ingredients:
1 teaspoon peanut or olive oil
2 tablespoon minced garlic, or to taste
¼ cup large chopped red onions
½ cup unsweetened coconut milk
2 tablespoons finely chopped lemon grass (optional)
1/3 cup chicken stock or chicken or beef bouillon cubes to taste
Sprinkle in chili powder to taste
½ cup finely sliced cabbage
1 cup chopped eggplant
½ cup large chopped tomatoes (optional)
1 cup tofu or 8 oz chicken breast, skin removed and sliced into 2 x 1\4 includes
Heat the peanut or olive oil in a large skillet and add the garlic.  Add onions.  If using chicken, add it here and cook until chicken loses its raw look.
Add coconut milk, lemon grass, chicken stock or bouillon cubes, and chili powder.  Stir in cabbage, eggplant, tomatoes and tofu. Cook until eggplant is soft. 
Optional:  ½ cup mushrooms,  2 cups spinach, 2 tablespoons fish sauce, 7 fresh peppermint leaves (finely chopped), or 2 tablespoons fresh lemon juice to taste
